Ingredients
  

Wet Ingredients
  • 2 cups grated zucchini Grate finely for best texture.
  • 1 cup sugar Can substitute half with applesauce for reduced sweetness.
  • 1/2 cup vegetable oil
  • 2 large eggs Can substitute with flaxseed meal for vegan option.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour Can use gluten-free blend if desired.
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
Add-ins
  • 1 cup chocolate chips Use extra if you love chocolate!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature. For a treat, serve with whipped cream or honey. The bread remains fresh at room temperature for about 3 days, refrigerated for up to a week, or frozen for up to 3 months.
