For the Bread
  • 3 pieces ripe bananas Use overripe bananas for more sweetness.
  • 1/2 cup sugar (brown or granulated)
  • 1/4 cup unsweetened applesauce
  • 2 large eggs Can be replaced with flaxseed meal or chia seeds for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour.
  • 1 cup chocolate chips (semi-sweet or dark) Feel free to experiment with different types of chocolate chips.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the bananas until smooth. Stir in the sugar, applesauce, eggs, and vanilla until well combined.
  3. Sprinkle the baking soda and salt over the mixture, then gently fold in the flour. Be careful not to overmix!
  4. Stir in the chocolate chips until they’re evenly distributed.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick comes out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store at room temperature for about 3 days, or refrigerate for up to a week. For longer storage, wrap tightly and freeze for up to 3 months.
