  • 1/2 cup sugar Can be swapped with honey or maple syrup, reduce the volume slightly.
  • 1 large egg Replace with a flaxseed egg for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour Can be substituted with gluten-free flour blend.
  • 1/2 cup chocolate chips Try using dark or white chocolate chips for variation.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sugar, egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and mix in thoroughly.
  6. Add the flour and mix until just combined.
  7. Fold in the chocolate chips.
  8. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with butter, chocolate sauce, or powdered sugar. Pairs well with Greek yogurt or vanilla ice cream. Store in the fridge for a week or freeze for up to three months.
