Preparation
- Preheat the oven to 400°F (200°C).
- Toss the cubed butternut squash in olive oil, salt, and pepper, then spread on a baking sheet. Roast for about 25 minutes until tender.
Mixing and Forming Patties
- In a large bowl, mash the white beans and add the cooked quinoa, roasted butternut squash, breadcrumbs, chipotle powder, garlic powder, and onion powder. Mix until well combined.
- Form the mixture into burger patties.
Cooking
- Heat olive oil in a skillet over medium heat and cook the patties for about 4-5 minutes on each side until golden brown.
Serving
- Serve on buns with your favorite toppings.
Notes
These burgers are great for make-ahead meals! Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat in the oven or stovetop.
