Ingredients
  

For the fritters
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs Can substitute with gluten-free breadcrumbs
  • 1/4 cup onions, finely chopped
  • 2 cloves garlic, minced Toasted for extra flavor
  • 1/4 cup fresh herbs (parsley, cilantro, or dill), chopped
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 unit egg, beaten (or a flax egg for a vegan option)
  • Oil for frying

Method
 

Preparation
  1. In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  2. Add the breadcrumbs, onions, garlic, herbs, cumin, paprika, salt, pepper, and the beaten egg. Mix until well combined.
  3. Form the mixture into small patties or fritters.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Fry the fritters for about 4-5 minutes on each side, or until golden brown and crispy.
  3. Remove from pan and drain on paper towels before serving.

Notes

Serve with a zesty dipping sauce like tahini or yogurt. Can be stored in the fridge for 3-4 days or frozen for up to 2 months.
