  • 1 can (14 oz) crushed tomatoes Base of the sauce.

  • 1/2 teaspoon salt To taste.
  • 1/4 teaspoon black pepper For seasoning.
  • 1/2 cup mozzarella cheese, shredded Melts beautifully on top.

Method
 

Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until softened.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the crushed tomatoes, oregano, basil, salt, and pepper. Bring to a simmer.
  5. Season the chicken breasts with salt and pepper and add them to the skillet.
  6. Cover and cook for about 20 minutes, or until the chicken is cooked through.
  7. Sprinkle mozzarella cheese on top of the chicken, cover, and let it melt.
  8. Garnish with fresh basil leaves before serving.

Notes

Serve this dish over a bed of silky polenta or alongside some crispy garlic bread. For storage, keep leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
