  • 2 cups cooked rice Day-old rice works best.
  • 1 cup cooked chicken, diced Use any leftover chicken for ease.
  • 1 cup mixed vegetables Peas, carrots, and bell peppers recommended.
  • 2 large eggs, beaten Can substitute with chickpea eggs for a vegan option.
  • 3 tablespoons soy sauce Adjust to taste.
  • 2 tablespoons vegetable oil For frying.
  • 2 pieces green onions, chopped For garnish.
  • to taste salt and pepper

Method
 

Cooking
  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Add the cooked chicken and mixed vegetables, and stir-fry until heated through.
  3. Push the chicken and vegetables to one side of the pan and add the beaten eggs, scrambling until cooked.
  4. Add the cooked rice and soy sauce, mixing everything together.
  5. Stir in the chopped green onions and season with salt and pepper.
  6. Serve hot and enjoy!

Notes

For extra crunch, serve alongside crispy egg rolls or fresh spring rolls. Chicken Fried Rice keeps well in the fridge for 3-5 days.
