Ingredients
  

For the Chicken
  • 2 large boneless skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 each lime, juiced
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • to taste salt and pepper
For the Cilantro Lime Rice
  • 1½ cups long grain white rice
  • 2¼ cups chicken broth
  • 1 each lime, juiced and zested
  • ¼ cup fresh cilantro, finely chopped
  • 1 tbsp butter
  • to taste salt
For the Bowl
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 tsp cumin plus pinch garlic powder for beans
  • 1 cup corn, charred in a dry skillet
  • 1 cup cherry tomatoes, halved or pico de gallo
  • 1 each avocado, sliced
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup sour cream or Greek yogurt
  • ¼ cup fresh cilantro, chopped
  • as needed lime wedges and hot sauce for serving

Method
 

Preparation
  1. Mix marinade ingredients and coat the chicken completely. Marinate for at least 20 minutes.
  2. Rinse the rice and cook it in chicken broth for 18 minutes covered.
  3. Rest the rice for 5 minutes, then stir in butter, lime juice, zest, and cilantro.
Cooking
  1. Sear the marinated chicken in a hot cast iron skillet for 5–6 minutes per side until it reaches 165°F. Rest for 5 minutes and slice.
  2. Char corn in a hot skillet until you see dark spots, about 5 minutes.
  3. Warm black beans with cumin, garlic powder, and salt in a small saucepan for 3 minutes.
Assembly
  1. Assemble bowls: start with a generous rice base, layer on sliced chicken, beans, corn, tomatoes, avocado, cheese, sour cream, cilantro, lime, and hot sauce.

Notes

Tips: Try marinating the chicken overnight for more flavor. Use brown rice for a wholesome twist. If short on time, grab a rotisserie chicken. Don’t skip the toppings for a flavor explosion.
