  • 1 large head cauliflower (chopped into florets)
  • 3 Tbsp olive oil
  • 3 Tbsp nutritional yeast
  • ½ tsp sea salt (to taste)
  • ½ tsp paprika
  • Pinch cayenne pepper (optional)

Method
 

Preparation
  1. Preheat the oven to 415°F (approximately 213°C) and line a large baking sheet with parchment paper.
  2. Add the raw cauliflower to a large mixing bowl. Drizzle with olive oil, and sprinkle with nutritional yeast, sea salt, paprika, and cayenne pepper. Toss until the cauliflower florets are well-coated.
Cooking
  1. Spread the cauliflower over the prepared baking sheet and roast on the center rack for 30 to 40 minutes, stirring halfway through, or until golden-brown and tender.
  2. Remove from the oven and taste for flavor. Sprinkle with additional sea salt and nutritional yeast if desired.
Serving
  1. Serve as a side dish with your favorite entrees or enjoy as a healthy snack or appetizer.
  2. Pair with chopped pistachios, pine nuts, walnuts, or pecans.

Notes

Make sure to coat the cauliflower well with the olive oil and seasoning mixture for the best flavor. You can customize the seasoning with lemon zest or garlic powder.
