Preparation
- Preheat the oven to 350°F (175°C).
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, broccoli florets, cheddar cheese, milk, eggs, garlic powder, onion powder, salt, and pepper. Mix well.
- Transfer the mixture to a greased baking dish.
- If using, sprinkle breadcrumbs on top.
Baking
- Bake for 25-30 minutes, or until the casserole is set and golden on top.
- Let cool slightly before serving.
Notes
This casserole can be stored in the fridge for up to 3-4 days and in the freezer for 2-3 months. Reheat in the oven or microwave.
