  • 1 cup quinoa, rinsed
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup milk Can substitute with almond milk for vegan version
  • 2 units eggs Can substitute with flaxseed mixture for vegan version
Seasonings
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
Topping
  • 1/2 cup breadcrumbs Optional for topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook quinoa according to package instructions.
  3. In a large bowl, combine cooked quinoa, broccoli florets, cheddar cheese, milk, eggs, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Transfer the mixture to a greased baking dish.
  5. If using, sprinkle breadcrumbs on top.
Baking
  1. Bake for 25-30 minutes, or until the casserole is set and golden on top.
  2. Let cool slightly before serving.

Notes

This casserole can be stored in the fridge for up to 3-4 days and in the freezer for 2-3 months. Reheat in the oven or microwave.
