  • 2 cups cooked chicken, shredded
  • 1 cup long-grain white rice
  • 2 cups broccoli florets
  • 2 cups chicken broth
  • 1 cup cheddar cheese, shredded
  • 1 can cream of chicken soup
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until fragrant.
  3. In the skillet, add the cooked chicken, rice, broccoli, chicken broth, cream of chicken soup, salt, pepper, and paprika. Stir well to combine.
  4. Pour the mixture into a greased 9×13 inch baking dish.
  5. Top with shredded cheddar cheese.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.

Notes

This casserole can be stored in the fridge for about 3-4 days or frozen for up to 3 months. You can also use different vegetables or cheeses for variation.
