  • 1 pound ground beef Medium-fat beef recommended
  • 1 small onion, chopped
  • 2 cloves garlic, minced Toast for depth of flavor
  • 4 cups beef broth Can substitute with vegetable broth for a lighter option
  • 2 cups elbow macaroni
  • 1 cup cheddar cheese, shredded For a twist, try gouda or pepper jack
  • 1 cup milk Cashew cream for a vegan version
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the onion and garlic; sauté until onions are translucent.
Cooking
  1. Pour in the beef broth and bring to a boil.
  2. Stir in the elbow macaroni and Italian seasoning. Cook until macaroni is tender, about 8-10 minutes.
  3. Reduce heat and stir in milk and cheddar cheese until melted and creamy.
  4. Season with salt and pepper to taste. Serve hot!

Notes

Store in the fridge for about 3-4 days or freeze for 2-3 months. Reheat on the stovetop and add a splash of milk if needed.
