Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
Wet Ingredients
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional) Optional for added crunch.
Topping
  • 1 batch Cream cheese frosting To taste

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the oil and eggs until well combined. Stir in the grated carrots and crushed pineapple.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in nuts if using.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool completely before frosting with cream cheese frosting. Cut into bars and serve.

Notes

These bars keep well for about 5 days in the fridge. They can also be frozen for up to 3 months. To serve, top with cream cheese frosting or enjoy warm with vanilla ice cream.
