  • 2 cups grated carrots Use freshly grated for best texture.
  • 2 cups diced apples Honeycrisp or Granny Smith are recommended.
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts Optional.
  • 1/2 cup plain yogurt or mayonnaise Can substitute with coconut yogurt for vegan.
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lemon juice
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. In a large bowl, combine the grated carrots, diced apples, raisins, and walnuts (if using).
  2. In a separate bowl, mix together the yogurt or mayonnaise, honey or maple syrup, and lemon juice until smooth.
  3. Pour the dressing over the salad mixture and toss until everything is well coated.
  4. Season with salt and pepper to taste.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

For a stunning presentation, serve on a bed of greens or alongside grilled chicken. Store leftover salad in an airtight container in the fridge for up to 3 days.
