- In a large bowl, combine the grated carrots, diced apples, raisins, and walnuts (if using).
- In a separate bowl, mix together the yogurt or mayonnaise, honey or maple syrup, and lemon juice until smooth.
- Pour the dressing over the salad mixture and toss until everything is well coated.
- Season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
For a stunning presentation, serve on a bed of greens or alongside grilled chicken. Store leftover salad in an airtight container in the fridge for up to 3 days.
