Ingredients
  

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar
For the filling
  • 2 (8 oz) packages cream cheese, softened Ensure it’s at room temperature
  • 1 cup sugar
  • 2 large eggs Can be replaced with flaxseed meal for a vegan option
  • 1 teaspoon vanilla extract
  • 2 cups diced apples Sweet-tart varieties like Granny Smith or Honeycrisp are best
  • 1 cup caramel sauce For drizzling
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the prepared dish.
Making the Filling
  1. In a large bowl, beat the cream cheese until smooth. Gradually add 1 cup of sugar, then mix in the eggs and vanilla until well combined.
  2. Fold in the diced apples and cinnamon. Pour the cream cheese mixture over the crust in the baking dish.
  3. Drizzle caramel sauce on top.
Baking
  1. Bake for 30-35 minutes or until the center is set.
  2. Let cool, then refrigerate for at least 2 hours before cutting into bars. Serve chilled.

Notes

For serving, pair with a scoop of vanilla ice cream or sprinkle additional cinnamon on top. The bars can be stored in the fridge for up to a week or frozen for 2-3 months.
