  • 4 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the orzo according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chicken and Cajun seasoning. Cook until the chicken is browned.
  4. Toss in the onion, bell pepper, and garlic. Sauté until the vegetables are tender.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the cooked orzo and cherry tomatoes. Stir to combine.
  7. Season with salt and pepper. Cook for an additional 5 minutes.
  8. Serve hot and enjoy!

Notes

For a creamier finish, add a splash of cream or a dollop of Greek yogurt. This dish can be made vegan by substituting chicken with chickpeas or tofu and using vegetable broth.
