  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup buffalo sauce
  • 2 large tortillas or wraps
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup ranch or blue cheese dressing (optional) Add for extra flavor.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a mixing bowl, combine the chickpeas and buffalo sauce, stirring until the chickpeas are well coated.
  2. Heat a pan over medium heat, add the chickpea mixture, and cook for about 5-7 minutes until heated through.
  3. Lay out the tortillas or wraps and layer on the shredded lettuce and diced tomatoes.
  4. Spoon the buffalo chickpea mixture onto the wraps.
  5. Drizzle with ranch or blue cheese dressing if desired, and season with salt and pepper.
  6. Roll up the wraps tightly, slice in half, and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. For meal prep, keep components separate until ready to eat. For added crunch, consider toasting the wraps before serving.
