Ingredients
  

For the filling
  • 1 can chickpeas (drained and rinsed)
  • 1 cup celery (chopped)
  • 1 cup green onion (chopped)
  • 1 cup red onion (chopped)
  • 1/4 cup parsley (chopped)
  • 1/3 cup tahini (or mayo/cashew butter) Can be substituted according to preference.
  • 1/4 cup buffalo sauce Adjust to taste.
  • 2 tbsp lemon juice (or lime juice)
  • To taste spices Your favorites.
  • To taste salt
  • To taste pepper

Method
 

Preparation
  1. In a large bowl, mash the drained chickpeas with a fork or potato masher until slightly chunky.
  2. Add in celery, green onion, red onion, and parsley.
  3. Stir in tahini (or your chosen spread), buffalo sauce, lemon juice, and spices. Adjust the buffalo sauce based on how spicy you want it!
  4. Add salt and pepper to taste.
  5. Spoon the mixture onto your favorite wrap, fold, and enjoy!

Notes

Let the mixture chill in the fridge for a little while to let those flavors blend beautifully. Serve with crunchy carrot sticks or potato chips for extra texture.
