For the Brownie Base
  • 1 box brownie mix (plus ingredients listed on box)
For the Cream Cheese Layer
  • 16 oz cream cheese, softened Make sure the cream cheese is at room temperature for easy mixing.
  • 1 cup powdered sugar Sifted if desired.
  • 1 teaspoon vanilla extract
For the Chocolate Mousse
  • 2 cups heavy whipping cream, divided 1 cup for mousse, 1 cup for topping.
  • 1/2 cup cocoa powder Use unsweetened cocoa powder.
  • 1/3 cup granulated sugar
For the Topping
  • 1 cup chocolate chips Melted for drizzling.
  • Chocolate shavings for garnish Optional for decoration.

Method
 

Brownie Preparation
  1. Prepare brownies according to the package directions in a 9x13 inch baking pan. Bake and allow to cool completely at room temperature, then refrigerate for 30 minutes until firm.
Cream Cheese Layer
  1. Beat softened cream cheese with powdered sugar and vanilla extract until smooth and fluffy, about 3 minutes.
  2. Spread this mixture evenly over the cooled brownie base, creating a smooth layer with an offset spatula.
  3. Refrigerate for 20 minutes to set.
Chocolate Mousse Layer
  1. Whip 1 cup of heavy cream with cocoa powder and granulated sugar until stiff peaks form.
  2. Gently spread this chocolate mousse over the cream cheese layer, being careful not to disturb the layer beneath. Smooth the top and refrigerate for another 30 minutes.
Whipped Cream Topping
  1. Whip the remaining 1 cup of heavy cream with 2 tablespoons powdered sugar until stiff peaks form.
  2. Pipe or spread whipped cream decoratively over the chocolate mousse layer.
  3. Melt chocolate chips and drizzle over the whipped cream topping. Sprinkle with chocolate shavings.
  4. Refrigerate for at least 3 hours, or overnight before serving for best results.

Notes

This cake keeps well in the fridge for about 3-5 days. Cover tightly to store. If you want to keep it longer, you can freeze it for up to 2 months. Just thaw it overnight in the fridge before serving.
