Ingredients
  

For the Cookie Layer
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Use room temperature for better mixing.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
For the Brownie Layer
  • 1 cup brownie mix Follow package instructions.
  • 1/4 cup water Use as per brownie mix instructions.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and line a baking dish with parchment paper.
  2. In a bowl, mix the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the butter, brown sugar, and granulated sugar together.
  4. Add in the egg and vanilla, mixing well.
  5. Gradually incorporate the dry ingredients into the wet mixture.
  6. Fold in the chocolate chips.
Baking
  1. Spread half of the cookie dough into the prepared pan.
  2. In a separate bowl, combine the brownie mix and water according to the package instructions. Spread it over the cookie layer.
  3. Spoon dollops of the remaining cookie dough on top of the brownie layer.
  4. Bake for 25-30 minutes or until a toothpick comes out clean.
  5. Let cool before cutting into squares and serving.

Notes

For the best texture, don’t overmix the dough, and keep an eye on baking time. Serve with vanilla ice cream for an enhanced experience.
