  • 8 oz pasta (your choice)
  • 1 can chickpeas, drained and rinsed
  • 2 cups broccoli florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Cook the pasta according to package instructions.
  2. In the last 3 minutes of cooking, add broccoli to the pasta water.
  3. In a skillet, heat the olive oil over medium heat.
  4. Add minced garlic and sauté until fragrant.
  5. Stir in chickpeas and cooked pasta, along with the broccoli.
  6. Season with salt, pepper, and red pepper flakes if using.
  7. Toss everything together and remove from heat.
  8. Garnish with fresh parsley before serving.

Notes

Leftover pasta can be stored in an airtight container in the fridge for up to 3 days. It can also be frozen for about a month.
