Ingredients
  

Dough Ingredients
  • 1 cup self-rising flour
  • 1 cup Greek yogurt (or regular yogurt)
Filling Ingredients
  • 1 cup shredded cheese (cheddar works best)
  • ½ cup cooked sausage (or bacon) No judgment here!
  • ¼ cup chopped vegetables (bell peppers, onions, etc.) Use whatever you love!
  • to taste Salt and pepper
Egg Wash
  • 1 egg beaten with a splash of water For brushing

Method
 

Preparation
  1. Mix the self-rising flour and Greek yogurt together until a soft dough forms.
  2. Lightly flour your surface and knead the dough a few times. Roll it out to about ¼ inch thick.
  3. Use a round cutter (or just a glass) to cut out circles.
  4. Spoon in your favorite cheese, sausage, and veggies.
  5. Fold the dough over and press the edges with a fork to seal them shut.
Baking
  1. Place the pockets on a baking sheet, brush with the egg wash, and bake at 400°F (205°C) for about 15-20 minutes until golden.

Notes

Serve with a side of fresh fruit or drizzle with maple syrup or hot sauce for extra flavor. Store in the fridge for about 3 days or freeze for up to a month. Reheat in the microwave or oven.
