Method
Preparation of Blueberry Compote
- In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for 5 minutes until the blueberries soften.
- If using, dissolve cornstarch in a little water and stir into the blueberry mixture to thicken. Remove from heat and cool completely.
Preparation of Yogurt Base
- In a bowl, mix Greek yogurt and vanilla extract until smooth. Adjust the sweetness with more honey or maple syrup if desired.
Assembly
- Spoon the yogurt into silicone molds or mini muffin tins, filling them about three-quarters full.
- Add a spoonful of the cooled blueberry compote on top of each yogurt portion and swirl gently with a toothpick to create a marbled effect.
Freezing
- Freeze the molds for at least 3 hours until solid.
- Once frozen, remove the bites from the molds and store them in an airtight container in the freezer.
- For the best texture, let them sit for 2–3 minutes before eating.
Notes
These bites are a refreshing snack on a hot day or a light dessert. They can be served plain or with a drizzle of honey on top for added sweetness. They can be stored in the freezer and are best enjoyed slightly softened.
