Ingredients
  

For the Blueberry Compote
  • 1/2 cup blueberries Fresh or frozen blueberries can be used.
  • 2 tbsp honey or maple syrup Adjust sweetness to preference.
  • 1 tsp lemon juice
  • 1/2 tsp cornstarch (optional) Use to thicken the compote.
For the Yogurt Base
  • 1 cup Greek yogurt Regular yogurt can be substituted, but Greek provides a thicker texture.
  • 1 tsp vanilla extract

Method
 

Preparation of Blueberry Compote
  1. In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for 5 minutes until the blueberries soften.
  2. If using, dissolve cornstarch in a little water and stir into the blueberry mixture to thicken. Remove from heat and cool completely.
Preparation of Yogurt Base
  1. In a bowl, mix Greek yogurt and vanilla extract until smooth. Adjust the sweetness with more honey or maple syrup if desired.
Assembly
  1. Spoon the yogurt into silicone molds or mini muffin tins, filling them about three-quarters full.
  2. Add a spoonful of the cooled blueberry compote on top of each yogurt portion and swirl gently with a toothpick to create a marbled effect.
Freezing
  1. Freeze the molds for at least 3 hours until solid.
  2. Once frozen, remove the bites from the molds and store them in an airtight container in the freezer.
  3. For the best texture, let them sit for 2–3 minutes before eating.

Notes

These bites are a refreshing snack on a hot day or a light dessert. They can be served plain or with a drizzle of honey on top for added sweetness. They can be stored in the freezer and are best enjoyed slightly softened.
