Ingredients
  

For the Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup sugar
  • 1/4 teaspoon salt
For the Cream Cheese Filling
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, softened butter, sugar, and salt to form a dough. Press the mixture into the bottom of a greased 9x9 inch baking pan.
Cream Cheese Filling
  1. In another bowl, beat the cream cheese until smooth.
  2. Add powdered sugar, egg, and vanilla, mixing until well combined.
  3. Gently fold in the fresh blueberries.
Baking
  1. Pour the cream cheese mixture over the crust in the baking pan and spread evenly.
  2. Bake for 25-30 minutes until the filling is set and the edges are lightly golden.
  3. Allow to cool before slicing into bars.

Notes

Serve with a dusting of powdered sugar or a dollop of whipped cream. These bars keep well in the fridge for up to a week and can be frozen for about a month. Let thaw overnight in the fridge or warm in the microwave before serving.
