Ingredients
  

For the Cobbler
  • 12 tablespoons unsalted butter, divided
  • 1.5 cups granulated sugar, divided (plus 2 tablespoons for sprinkling on top)
  • 2 teaspoons lemon zest
  • 3 cups blueberries Use fresh blueberries for the best flavor, frozen works in a pinch.
  • 1.5 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.75 teaspoons salt
  • 1.5 cups milk Almond milk can be used for a vegan option.
  • 1 teaspoon vanilla

Method
 

Preparation
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Place 4 tablespoons of butter into a 9 x 13 pan and melt it in the oven.
  3. In a pan, brown the remaining butter until it’s golden and nutty.
Mixing
  1. In a bowl, mix 1 cup of sugar, lemon zest, and blueberries to create the filling.
  2. Whisk together flour, baking powder, salt, milk, vanilla, and the browned butter until smooth for the batter.
Assembly
  1. Pour the batter over the melted butter.
  2. Spoon the blueberry mixture on top.
Baking
  1. Bake for around 45 minutes until golden.
  2. Serve warm with ice cream or whipped cream.

Notes

Leftovers can be stored in the fridge for about 3 to 4 days. Reheat in the microwave or oven. For a variation, try mixing in different berries or make it vegan.
