Preparation
- Preheat the oven to 350°F (175°C) and grease an 8-inch square baking dish.
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- Add the melted coconut oil (or applesauce), non-dairy milk, and vanilla extract. Mix until well combined.
- Gently fold in the fresh blueberries.
- Pour the batter into the prepared baking dish.
Topping
- In a separate bowl, mix together the brown sugar, rolled oats, and cinnamon for the topping.
- Sprinkle it evenly over the batter.
Baking
- Bake for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool slightly before serving.
Notes
Serve with powdered sugar or whipped cream. Keeps well in the fridge for 3-5 days.
