  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup coconut oil (melted) or applesauce
  • 1 cup non-dairy milk
  • 1 tsp vanilla extract
  • 2 cups fresh blueberries
Topping Ingredients
  • 1/2 cup brown sugar for topping
  • 1/2 cup rolled oats for topping
  • 1/2 tsp cinnamon for topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the melted coconut oil (or applesauce), non-dairy milk, and vanilla extract. Mix until well combined.
  4. Gently fold in the fresh blueberries.
  5. Pour the batter into the prepared baking dish.
Topping
  1. In a separate bowl, mix together the brown sugar, rolled oats, and cinnamon for the topping.
  2. Sprinkle it evenly over the batter.
Baking
  1. Bake for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let cool slightly before serving.

Notes

Serve with powdered sugar or whipped cream. Keeps well in the fridge for 3-5 days.
