  • 3 pieces ripe bananas The more spots, the sweeter the bread!
  • 1 cup blueberries (fresh or frozen) Can use frozen blueberries directly.
  • 1/3 cup melted butter Make sure it's cooled slightly before mixing.
  • 1 cup sugar Adjust if blueberries are too tart.
  • 1 piece egg Substitute with flax egg for vegan version.
  • 1 teaspoon vanilla extract Adds flavor depth to the bread.
  • 1 teaspoon baking soda Active ingredient for leavening.
  • pinch none salt Enhances the overall flavor.
  • 1 1/2 cups all-purpose flour Can be substituted with gluten-free flour.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in the sugar, egg, and vanilla extract until well combined.
  5. Sprinkle the baking soda and salt over the mixture and mix.
  6. Add the flour and stir until just combined, being careful not to overmix.
  7. Gently fold in the blueberries.
  8. Pour the batter into a greased loaf pan.
Baking
  1. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Slice and enjoy with butter or cream cheese. Store at room temperature for 3-4 days, or freeze for up to 2 months. Reheat as needed.
