  • 2 cups vegetable broth Use low-sodium broth for a healthier option.
  • 1 cup mushrooms, sliced Any type of mushrooms can be used.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. In a large pan, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the sliced mushrooms and cook until softened.
  4. Add the rice and stir to combine.
Cooking
  1. Pour in the vegetable broth, season with salt and pepper, and bring to a boil.
  2. Reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  3. Fluff with a fork, garnish with fresh parsley, and serve warm.

Notes
