Wet Ingredients
  • 0.5 cups unsalted butter, softened
  • 0.5 cups granulated sugar
  • 0.25 cups packed brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 0.75 cups mashed ripe bananas
Optional Ingredients
  • 0.5 cups chopped walnuts optional
Glaze
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon milk

Method
 

Preparation
  1. Whisk together the flour, baking soda, salt, and cinnamon in a medium bowl. Set aside.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until combined. Then, mix in the mashed bananas until fully incorporated.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Gently fold in walnuts if using.
  5. Cover the dough and chill for at least 30 minutes. Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
Baking
  1. Drop rounded tablespoons of dough onto prepared baking sheets.
  2. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  3. Cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Preparing the Glaze
  1. Beat softened cream cheese and powdered sugar until smooth.
  2. Gradually add milk until you reach your desired drizzling consistency.
Glazing the Cookies
  1. Once cookies are completely cool, drizzle or spread the cream cheese glaze over the tops.
  2. Let the glaze set for 15-20 minutes before serving.

Notes

Use overripe bananas for maximum flavor and sweetness. Round cookie dough balls will give a chewy texture. Chocolate chips or coconut flakes can be added for variations.
