  • 3/4 cup sugar

  • 1 teaspoon vanilla extract

  • optional nuts or chocolate chips Fold in if desired.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in the baking soda and salt.
  5. Add the sugar, beaten egg, and vanilla extract. Mix well.
  6. Stir in the flour until just incorporated. Fold in nuts or chocolate chips if desired.
  7. Pour the batter into the greased loaf pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Serve with coffee or milk. Cover and store at room temperature for 3-5 days. For longer storage, refrigerate for a week or freeze slices for up to 3 months.
