  • 2 pieces ripe bananas Make sure they are nice and ripe for sweetness.
  • 1 cup rolled oats
  • 1/2 cup milk (or non-dairy alternative) Use your preferred milk type.
  • 1/4 cup maple syrup (optional) Can substitute with honey or agave.
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chocolate chips or blueberries (optional) Feel free to experiment with nuts or different fruits.

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the rolled oats, milk, maple syrup, baking powder, baking soda, cinnamon, and salt until combined.
  4. If using, fold in chocolate chips or blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.

Notes

Store in the fridge for about a week or freeze for up to three months. Reheat in the microwave for 15-20 seconds.
