Preparation
- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
- In a large bowl, mash the ripe bananas until smooth.
- Stir in the rolled oats, cinnamon, nut butter, honey or maple syrup (if using), salt, and vanilla extract until fully combined.
- Pour the mixture into the prepared baking pan and spread evenly.
Baking
- Bake for 20-25 minutes, or until the edges turn golden brown.
- Allow to cool before cutting into bars.
Notes
These bars can be served with a drizzle of honey, extra nut butter, fresh fruit, or yogurt. Store them in an airtight container; they last a few days at room temperature or up to a week in the refrigerator. Freeze for longer storage.
