Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Stir in the rolled oats, cinnamon, nut butter, honey or maple syrup (if using), salt, and vanilla extract until fully combined.
  4. Pour the mixture into the prepared baking pan and spread evenly.
Baking
  1. Bake for 20-25 minutes, or until the edges turn golden brown.
  2. Allow to cool before cutting into bars.

Notes

These bars can be served with a drizzle of honey, extra nut butter, fresh fruit, or yogurt. Store them in an airtight container; they last a few days at room temperature or up to a week in the refrigerator. Freeze for longer storage.
