Main Ingredients
  • 3 pieces ripe bananas The browner, the better for sweetness.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Can swap half for whole wheat for added texture.
  • 1/2 cup chopped nuts Walnuts or pecans work well.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in the baking soda and salt.
  5. Add the sugar, beaten egg, and vanilla extract, and mix well.
  6. Finally, stir in the flour and chopped nuts until just combined.
  7. Pour the batter into a greased loaf pan and bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool before serving.

Notes

Slice and serve warm with a pat of butter. It can also be drizzled with honey. Keep it at room temperature for 3-4 days, in the fridge for up to a week, or frozen for up to 3 months.
