  • 2-3 pieces ripe bananas, mashed Use very ripe bananas for best sweetness.
  • 1 cup sugar
  • 0.5 cup butter, softened Must be softened for easy blending.
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup chopped walnuts or chocolate chips (optional) Can use either or both for added flavor.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until fluffy.
  3. Stir in the mashed bananas, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  6. Fold in walnuts or chocolate chips if using.
Baking
  1. Drop rounded tablespoons of dough onto a lined baking sheet.
  2. Bake for 10-12 minutes, or until the edges are golden brown.

Notes

These cookies can be stored in an airtight container at room temperature for up to 3 days, or frozen for up to a month. Reheat in the microwave for a few seconds before serving.
