  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 cup all-purpose flour Can be substituted with gluten-free flour for a gluten-free version.
  • 1/2 cup vegan chocolate chips Can experiment with different add-ins like nuts or dried fruit.

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, mash the bananas with a fork until smooth.
  3. Stir in the melted coconut oil.
  4. Mix in the vanilla extract, baking soda, and salt.
  5. Add the sugar, flour, and chocolate chips, stirring until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Allow to cool in the pan for 10 minutes, then remove from the pan and let cool completely on a wire rack.

Notes

Store wrapped tightly at room temperature for 3-4 days, in the fridge for an extra week, or freeze for up to 3 months. To warm, pop in the toaster or microwave.
