Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a mixing bowl, mash the bananas with a fork until smooth.
- Stir in the melted coconut oil.
- Mix in the vanilla extract, baking soda, and salt.
- Add the sugar, flour, and chocolate chips, stirring until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes, then remove from the pan and let cool completely on a wire rack.
Notes
Store wrapped tightly at room temperature for 3-4 days, in the fridge for an extra week, or freeze for up to 3 months. To warm, pop in the toaster or microwave.
