Ingredients
  

Main Ingredients
  • 3 pieces ripe bananas, mashed The riper, the better for sweetness.
  • 1/3 cup melted butter Add an extra tablespoon for moisture if desired.
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten Can substitute with 1/4 cup unsweetened applesauce.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute half with whole wheat flour for added fiber.
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon
Streusel Topping
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 2 tablespoons melted butter Mix with dry ingredients until crumbly.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, combine melted butter with the mashed bananas.
  3. Mix in baking soda and salt.
  4. Stir in sugar, egg, and vanilla extract.
  5. Add in flour and rolled oats until just incorporated.
  6. Pour the batter into the prepared loaf pan.
Streusel Topping Preparation
  1. In a separate bowl, combine brown sugar, flour, oats, and cinnamon.
  2. Mix with melted butter until crumbly.
  3. Sprinkle the streusel over the top of the batter in the pan.
Baking
  1. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with butter or honey. Pairs well with coffee or tea. Store in airtight container for 3-4 days, refrigerate for up to a week, or freeze up to 3 months.
