Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in the baking soda and salt.
  5. Stir in the sugar, beaten egg, and vanilla extract.
  6. Mix in the flour until just incorporated.
  7. Fold in the chocolate chips.
Baking
  1. Pour the batter into the greased loaf pan.
  2. Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

For serving, slice the bread and enjoy as is or with butter/cream cheese. It can be refrigerated for a week and frozen for up to 3 months. Rest the bread before slicing to avoid crumbling.
