  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
Wet Ingredients
  • 2 ripe bananas, mashed
  • 1/2 cup buttermilk or milk
  • 1 teaspoon vanilla extract
Other Ingredients
  • 1/2 cup cold butter, cubed Use a pastry cutter for best results.

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix the flour, sugar, salt, baking powder, and baking soda.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the mashed bananas, buttermilk, and vanilla extract until just combined.
  5. Turn the dough onto a floured surface and knead a few times.
  6. Pat into a circle about 1-inch thick and cut into wedges.
  7. Place the wedges on a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes or until golden brown.

Notes

Store in an airtight container in the fridge for about 3-4 days. For longer storage, freeze for up to 3 months. Reheat in the microwave for a warm treat.
