Ingredients
  

Wet Ingredients
  • 1 whole ripe banana The riper, the better for sweetness.
  • 1/2 cup unsalted butter, softened Leave out to reach room temperature before using.
  • 1/2 cup brown sugar Packed for optimal sweetness.
  • 1/4 cup granulated sugar
  • 1 whole egg
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt Enhances flavor.
Mix-ins
  • 1/2 cup chocolate chips Feel free to substitute with walnuts or pecans.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mash the ripe banana.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  4. Beat in the egg and vanilla extract, then mix in the mashed banana.
  5. In a separate bowl, combine the flour, baking soda, and salt. Gradually add this to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips.
  7. Drop spoonfuls of the dough onto the prepared baking sheet.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Enjoy your cookies warm or freeze them for later!

Notes

Keep cookies in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. For thicker cookies, chill the dough for about 30 minutes before baking. Adjust the sweetness by tweaking sugar amounts if desired.
