  • 3 pieces ripe bananas, mashed Aim for ripe bananas with dark brown spots for maximum sweetness.
  • 1/3 cup melted butter Make sure it's melted but not boiling.
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten For a vegan version, substitute with flaxseed meal or applesauce.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour You can use whole wheat flour for added nutrition.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and salt.
  5. Stir in the sugar, beaten egg, and vanilla extract.
  6. Mix in the flour until just incorporated.
Baking
  1. Pour the batter into the greased loaf pan.
  2. Bake for 60-65 minutes or until a toothpick comes out clean.
  3. Allow to cool in the pan for a few minutes, then turn out onto a wire rack to cool completely.

Notes

Keep your baking fun, and don’t over-mix your batter! Gently fold in the flour until just combined for a light and fluffy bread. Consider toasting slices for a delightful crunch, and store in an airtight container at room temperature for up to 3 days.
