Ingredients
  

For the patties
  • 1 Tablespoon ground flax seeds
  • 3 Tablespoons water
  • ½ cup rolled oats (old-fashioned, gluten-free if necessary)
  • 15 ounces chickpeas (1½ cups), rinsed and drained
  • 2 cloves garlic (minced)
  • ½ cup red bell pepper (chopped)
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon tamari (or soy sauce if not gluten-free)
  • 1 teaspoon Italian seasoning
  • Salt and pepper (to taste)
  • 1 Tablespoon extra virgin olive oil (for brushing the patties before baking)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine the ground flax seeds and water. Stir together and set aside for a few minutes until it thickens.
  3. In your food processor, add the oats, chickpeas, garlic, red bell pepper, Dijon mustard, tamari, Italian seasoning, and a sprinkle of salt and pepper. Toss in the flaxseed mixture too.
  4. Process until a thick mixture forms, but don’t overdo it! You want some chunks of chickpeas and bell pepper.
  5. Divide the mixture into 4 equal parts and shape each into a patty. Wet your hands if you’re having trouble!
  6. Place the patties on a baking sheet lined with parchment paper.
  7. Brush each side with olive oil to get them golden.
Baking
  1. Bake for 35–40 minutes, flipping the patties after 20 minutes, until they look golden brown and crispy.

Notes

Consistency matters: If your mix seems too wet, add a tad more oats. Too dry? A splash of water will fix that! Experiment with spices: Add a pinch of cumin or some smoked paprika for extra flavor. Keep an eye on your patties; oven times can vary.
