Preparation
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the ground flax seeds and water. Stir together and set aside for a few minutes until it thickens.
- In your food processor, add the oats, chickpeas, garlic, red bell pepper, Dijon mustard, tamari, Italian seasoning, and a sprinkle of salt and pepper. Toss in the flaxseed mixture too.
- Process until a thick mixture forms, but don’t overdo it! You want some chunks of chickpeas and bell pepper.
- Divide the mixture into 4 equal parts and shape each into a patty. Wet your hands if you’re having trouble!
- Place the patties on a baking sheet lined with parchment paper.
- Brush each side with olive oil to get them golden.
Baking
- Bake for 35–40 minutes, flipping the patties after 20 minutes, until they look golden brown and crispy.
Notes
Consistency matters: If your mix seems too wet, add a tad more oats. Too dry? A splash of water will fix that! Experiment with spices: Add a pinch of cumin or some smoked paprika for extra flavor. Keep an eye on your patties; oven times can vary.
