  • 200 g feta cheese Can be substituted with goat cheese for a different flavor.
  • 2 tablespoons olive oil Extra virgin olive oil is recommended for flavor.
  • 1 unit lemon (zested and juiced) Zest and juice for bright flavor.
  • 2 teaspoons fresh thyme Or 1 teaspoon of dried thyme.
  • Salt and pepper to taste Season as desired.
  • Fresh parsley for garnish (optional) Enhances presentation and flavor.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and cube the potatoes, then place them in a large baking dish.
  3. Drizzle olive oil, lemon juice, salt, and pepper over the potatoes.
  4. Crumble the feta cheese on top and add lemon zest and thyme.
  5. Toss everything together until the potatoes are evenly coated.
Cooking
  1. Bake for 30-35 minutes, or until the potatoes are tender and golden brown.
  2. Garnish with fresh parsley before serving.

Notes

Great served with grilled chicken or fish or as a part of a vegetarian meal. For extra crispiness, consider parboiling the potatoes for 5-10 minutes before baking. Leftovers keep well in the fridge for 3-4 days. Reheat in the oven or microwave.
