  • 2 cups broccoli florets, finely chopped
  • 1 cup breadcrumbs for binding
  • 1.5 cups shredded cheddar cheese
  • 1/3 cup grated Parmesan cheese
  • 2 large eggs for binding
  • 2 tbsp all-purpose flour for binding
  • 1/2 tsp garlic powder for seasoning
  • 1/2 tsp onion powder for seasoning
  • to taste Salt
  • to taste Pepper
  • Cooking spray for greasing the baking sheet

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Steam the broccoli florets until tender-crisp (about 3-5 minutes). Let them cool, then finely chop.
  3. In a large bowl, combine the chopped broccoli, breadcrumbs, cheddar cheese, Parmesan cheese, eggs, and flour.
  4. Season with garlic powder, onion powder, salt, and pepper. Stir until everything is well combined.
  5. Roll small portions of the mixture into 1-inch balls. Place them on a parchment-lined or greased baking sheet.
Cooking
  1. Bake for 20-25 minutes until golden brown.
  2. For that extra crispiness, broil for an additional 1-2 minutes—but watch them closely!
  3. Cool slightly, serve warm, and dip into your favorite marinara or ranch sauce.

Notes

Have leftovers? These will keep in the fridge for about 3-5 days. To reheat, pop them in the toaster oven or bake them for a few minutes to crisp them back up. If you want to make them ahead of time, freeze them before baking and just cook them straight from the freezer when you’re ready.
