  • 1 pound boneless skinless chicken breast
  • 2 tablespoons olive oil for seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup hot honey to glaze the chicken
  • 2 cups cooked white rice base of the bowls
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 1 ripe avocado diced for topping
  • 1/4 cup finely chopped red onion
  • 1 jalapeno thinly sliced
  • 2 tablespoons chopped fresh cilantro
  • 1 lime cut into wedges for serving

Preparation
  1. In a small bowl, combine olive oil, chili powder, smoked paprika, ground cumin, salt, and black pepper.
  2. Brush the seasoning mixture evenly over both sides of the chicken breasts.
Cooking
  1. Heat a large skillet over medium-high heat and add the seasoned chicken.
  2. Cook the chicken for 5–6 minutes per side until golden brown and cooked through.
  3. Reduce heat to low and pour hot honey over the chicken, spooning the glaze continually for 1–2 minutes.
  4. Remove the chicken from the skillet and let it rest for 5 minutes before slicing.
Assembling the Bowls
  1. Divide cooked rice, black beans, and corn evenly among serving bowls.
  2. Top each bowl with sliced chicken, diced avocado, red onion, jalapeño, and chopped cilantro.
  3. Serve with lime wedges.

Notes

Feel free to substitute chicken with grilled shrimp or tofu for a vegan option. Mixing everything together in the bowl helps blend the delicious flavors!
