  • 2 ripe avocados, diced Use firm avocados.
  • 1 can black beans, rinsed and drained
  • 1 cup corn (frozen or fresh)
  • 1 small red onion, finely chopped
  • 1 medium bell pepper, diced
  • 1 jalapeño, diced (optional) For spicy lovers!
Dressing
  • 1 lime (juice of 1) For added freshness.
  • to taste Salt and pepper
  • to taste Fresh cilantro, chopped (optional) Adds flavor and color.

Method
 

Preparation
  1. In a large bowl, combine the diced avocados, black beans, corn, red onion, bell pepper, and jalapeño.
  2. Squeeze the lime juice over the mixture and season with salt and pepper.
  3. Gently toss to combine all those yummy flavors.
  4. Serve immediately with tortilla chips or as a delightful side dish.

Notes

Store leftovers in the fridge for 1-2 days. Press plastic wrap onto the surface before sealing for better freshness. Can be made ahead, but add avocado closer to serving time.
