Ingredients
  

Dry Ingredients
  • 1.5 cups all purpose flour
  • 0.25 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 2 teaspoons ground cinnamon
Wet Ingredients
  • 0.5 cups unsweetened applesauce
  • 0.5 cups soy milk or other milk alternatives
  • 1/3 cups soy milk for the glaze
  • 0.5 teaspoon pure vanilla extract
Main Ingredients
  • 2 large apples (Granny Smith, Honey Crisp, or other crisp variety) diced
  • Vegetable oil for frying
  • 3 cups powdered sugar for dusting

Method
 

Preparation
  1. In a large bowl, add the flour, sugar, baking powder, salt, and cinnamon. Stir until combined.
  2. Add the applesauce and soy milk to the dry mix. Stir until just combined—no over-mixing allowed!
  3. Gently fold in the diced apples.
Cooking
  1. Heat about 2 inches of oil in a large skillet or pot to around 375 degrees (do use a thermometer!).
  2. Scoop 1/3 cup of the fritter batter into the hot oil, then flatten it slightly.
  3. Cook on one side for 2-3 minutes until golden brown, then flip with tongs and cook another 1-2 minutes until nicely browned.
  4. Transfer them to a cooling rack with parchment paper underneath to catch any drippings.
  5. Continue with the rest of the batter until it’s all cooked, then turn off the heat.
Glazing
  1. In a separate bowl, whisk together powdered sugar, soy milk, and vanilla extract until smooth.
  2. Dunk each fritter into the glaze, then set back on the rack to harden.

Notes

Serve these fritters while they’re still warm for the best flavor. Dust with additional powdered sugar, drizzle with caramel, or add a scoop of vanilla ice cream for added indulgence.
