Preparation
- In a large bowl, add flour, sugar, baking powder, salt, and cinnamon. Stir to combine.
- Pour in the applesauce and soy milk into the bowl with the dry mix. Mix until just combined—don’t over mix. Gently fold in the diced apples.
Frying Fritters
- Heat about 2 inches of oil in a large, heavy skillet or pot to about 375 degrees.
- Scoop 1/3 cup of the batter and place it in the hot oil, slightly flattening it.
- Fry one side for about 2-3 minutes until golden brown, then flip it with tongs. Cook the other side for another 1-2 minutes.
- Transfer the fritters to a cooling rack with a pan or parchment paper underneath to catch any drippings.
- Repeat until you’ve used all the batter, then turn off the heat.
Making the Glaze
- Whisk together powdered sugar, soy milk, and vanilla extract until smooth.
- Dunk each fritter in the glaze and place them back on the rack to harden.
- If you can, wait a few minutes before diving in!
Notes
Serve warm, drizzled with extra glaze or dusted with powdered sugar. For extra fluffiness, reheat in the oven at a low temperature.
