Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
Wet Ingredients
  • 1/2 cup unsweetened applesauce
  • 1/2 cup soy milk
Fritters
  • 2 large apples (Granny Smith, Honey Crisp, or any crisp variety) Diced
  • Vegetable oil, for frying Approximately 2 inches deep in a large skillet
Glaze
  • 3 cups powdered sugar
  • 1/3 cup soy milk
  • 1/2 teaspoon pure vanilla extract

Method
 

Preparation
  1. In a large bowl, add flour, sugar, baking powder, salt, and cinnamon. Stir to combine.
  2. Pour in the applesauce and soy milk into the bowl with the dry mix. Mix until just combined—don’t over mix. Gently fold in the diced apples.
Frying Fritters
  1. Heat about 2 inches of oil in a large, heavy skillet or pot to about 375 degrees.
  2. Scoop 1/3 cup of the batter and place it in the hot oil, slightly flattening it.
  3. Fry one side for about 2-3 minutes until golden brown, then flip it with tongs. Cook the other side for another 1-2 minutes.
  4. Transfer the fritters to a cooling rack with a pan or parchment paper underneath to catch any drippings.
  5. Repeat until you’ve used all the batter, then turn off the heat.
Making the Glaze
  1. Whisk together powdered sugar, soy milk, and vanilla extract until smooth.
  2. Dunk each fritter in the glaze and place them back on the rack to harden.
  3. If you can, wait a few minutes before diving in!

Notes

Serve warm, drizzled with extra glaze or dusted with powdered sugar. For extra fluffiness, reheat in the oven at a low temperature.
