Ingredients
  

For the Fritter Bites
  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp kosher salt
  • 2 tsp ground cinnamon Brings warm flavor
  • 0.25 cup unsalted butter Melted
  • 0.25 cup granulated sugar
  • 1 large egg Can be substituted with a flax egg for vegan option
  • 0.5 tsp vanilla extract
  • 0.5 cup unsweetened applesauce
  • 1.5 cups finely diced apples (Honeycrisp or Gala) Fresh apples recommended
For the Glaze
  • 2 cups powdered sugar
  • 0.33 cup apple cider or juice

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and grease a nonstick baking sheet.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a large bowl, mix melted butter and sugar until combined.
  4. Add the egg, vanilla extract, and applesauce; whisk until smooth.
  5. Combine the dry ingredients into the wet mixture and gently fold in the diced apples.
  6. Scoop tablespoon-sized portions onto the prepared baking sheet.
Baking
  1. Bake for about 10 minutes until golden brown.
  2. Switch on the broiler for an additional 2-4 minutes to caramelize the tops.
Glazing
  1. For the glaze, whisk powdered sugar with apple cider until smooth and brush over warm fritter bites.

Notes

Keep an eye on the broiler; it can go from perfect to crispy in the blink of an eye. Store leftovers in an airtight container in the fridge for up to 3 days or freeze unglazed bites for up to 3 months.
