  • 4 pieces chicken breasts
  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together apple cider, olive oil, garlic, thyme, rosemary, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
Cooking
  1. Place the marinated chicken in a baking dish and pour any leftover marinade over the top.
  2. Roast in the oven for 25-30 minutes or until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).
  3. Let it rest for a few minutes before slicing and serving with your favorite sides.

Notes

For extra flavor, try adding a splash of Dijon mustard or a hint of chili flakes to the marinade. Dark meat can be substituted for a richer taste. Leftovers can be stored for up to 3 days in the fridge or frozen for up to three months. Thaw before reheating.
