Preparation
- In a bowl, mix together the almond flour, coconut oil, and maple syrup until well combined.
- Add in 1/4 cup of the chocolate chips and mix again to combine.
- Line a small baking sheet or large plate with parchment paper.
- Place the cookie dough mixture on top of the parchment paper. Use your hands to spread and flatten the mixture into a large piece of cookie dough bark.
- Melt the remaining 3/4 cup of chocolate chips. Pour the melted chocolate over the cookie dough bark and spread it into an even layer.
- Place the bark in the freezer for at least one hour to set.
Serving
- Remove the cookie dough bark from the freezer. Cut or break it into large pieces and enjoy right away.
Notes
Store any leftover bark in an airtight container in the freezer. Take out only what you plan to eat, as it can melt quickly at room temperature. Consider adding nuts or seeds for crunch, or customize with peanut butter or vanilla extract.
